Turducken
Wikipedia defines Turducken as a de-boned turkey stuffed with a de-boned duck, which itself is stuffed with a small de-boned chicken. The cavity of the chicken and the rest of the gaps are filled with, at the very least, a highly seasoned breadcrumb mixture or sausage meat.
The Original Bow Valley Turducken is available exclusively at the Railway Deli & Restaurant and is produced in limited quantities in our in house butchery. Order yours today!
We professionally prepare every Turducken with care and attention. The result is a solid, layered, specialized poultry product, suitable for slow cooking by braising, roasting, grilling, or barbecuing.
The Railway Deli & Restaurant has been producing Turducken since 2003 (formerly under the name Griesserspoon Turducken) and it has quickly become a favorite unique dish generously served in place of the traditional roasted turkey during various holiday periods such as Thanksgiving and Christmas.

FREQUENTLY ASKED QUESTIONS
Q. What is a Turducken and how much does it weigh?
A. The Turducken is a 5 kg to 10 kg (11 lbs to 22 lbs) boneless turkey stuffed with duck and chicken with layers of delicious stuffing between each bird.
Q. Is the Turducken frozen and if so how do I defrost it?
A. Every order for a Railway Deli & Restaurant Signature Turducken is personally prepared and is fresh. We do prepare an inventory of Turducken in advance and these are flash-frozen to ensure maximum flavor retention. These are frozen in a vacuum sealed bag to retain its freshness. To defrost, you can simply thaw your Turducken in refrigerator for 5 days or for rapid thawing place in sink or bucket with cool water for 24 hours.
Q. How do I cook a Turducken?
A. There are 2 options in cooking a Turducken:
1. Low Temperature Cooking
Heat oven to 200°F.
Place the bird on a rack and put it in an oven pan and set it in the center of the oven and bake until internal temperature exceeds 170°F, up to 15 hours depending on size*.
*Cooking time: please calculate approx. 1.5 hrs per kilogram.
e.g. a 5 kg Turducken would take up to 7.5 hrs.
Note: there’s no need to baste or cover with foil. If bird is not elevated on a rack, accumulated drippings will have to be removed from the pan every few hours so that the lower portion does not deep fry in the hot oil.
Remove the Turducken from the oven and allow it to rest for 30 min before moving from the cooking container. Meanwhile, make the gravy with some of the pan drippings. With strong spatulas inserted underneath (remember there are no bones to support the bird’s structure), carefully transfer the Turducken to a serving platter. Remove the stitching by pulling on one end of the twine while holding the Turducken and present it to your guests before carving. Be sure to make your slices crosswise so that each slice contains all three meats. Serve additional bowls of the dressing on the side.
For your convenience we offer our own made Turkey gravy and additional Italian Sausage Bread Stuffing or Dried Fruit Bread Stuffing.
Important Notes:
For frozen Turducken please allow 5 days to defrost in your fridge.
Using an oven thermometer or regular meat thermometer is necessary. They are available for purchase in our Deli.
2. High Temperature Cooking instructions!
Heat oven to 350°F.
Cut up a couple of carrots, onions and celery, put in an oven pan, place the Turducken on top of the veggies, add some red wine and water in and set it in the center of the oven and bake until internal temperature exceeds 170°F.
The 11 – 22 pound (5 - 10 kg) Turducken cooks at 350°F for 4 hours – 7.5 hours covered and 1 hour uncovered, breast down or until internal temperature exceeds 170°F*.
*Cooking time: please calculate approx. ¾ hours roasting time per kilogram.
e.g. a 5 kg Turducken would take up to 4 hrs.
We recommend basting the Turducken during its roasting time every ˝ hour to keep it nice and moist. Use its own drippings mixed with water and white wine.

A. Our Turduckens range in size from 5 kg / 11 lbs (which will feed 10 to 15 people) to 10 kg / 22 lbs (which will feed 20 to 25 people).
Please calculate approx. 0.5 kg per person.
Q. Does the Turducken contain any MSG or preservatives?
A. No the Turducken does not contain any MSG or preservatives.

Q. What about gravy ?
A. You can prepare your own (see cooking instructions above), however, because a Turducken is de-boned and much of the fat removed, for those gravy lovers, there may not be sufficient drippings to accommodate your wishes. The Railway Deli & Restaurant can supply you with our own gravy which is sealed in 1lb container for your convenience.
Q. What about extra stuffing ?
A. Yes, we have homemade Italian Sausage Bread stuffing and/or Dried Fruit Bread stuffing available in 1kg vacuum sealed bags.
Q. How long in advance do I have to order my Turducken ?
